食譜~【蒜片牛柳粒】





家常不賣弄花巧
實而不華
最重要步驟簡單
炒牛肉不能過火
否則肉質會變得粗硬
牛肉也不用特別調味
用牛柳口感比較嫩滑
加埋爆香的蒜片
簡簡單單兩種食材
已經是一碟惹味餸菜
【蒜片炒牛柳粒】
 
[材料]
牛柳300

[醃料]
薑汁1茶匙
紹酒1茶匙
[調味料]
黑胡椒茶匙
海鹽茶匙
頭抽2茶匙
[做法]
1.牛柳略洗,用廚紙索乾水份,切丁方,加入醃料拌勻。
2.蒜頭去衣切薄片。
3.起鑊,下油3湯匙燒熱,加入蒜片,以小火慢慢炸至金黃,先撈起備用。
4.用原鑊,以餘下之蒜油,開中大火加入牛柳粒,加入調味料,以筷子翻面煎牛柳粒各面也呈金黃色。
5.把蒜片回鑊兜勻即成。
